A plate of simple brown bread and butter is the first thing you’ll get here. The bread itself is soft with an air of sourdough tang—save a few chunks for soaking up the various fatty sauces you’ll want to lap up from your plate like a barn cat. They’re very generous with the cloud-soft butter here, and it’s fun to watch servers scoop schmears of it from a butter mountain that looks like an abstract foam sculpture you’d see at MoMa. There are carefully chosen small plates, starters, and entrées. Start off with coal-roasted Belon or Fin de la Baie oysters, malt vinegar potato chips, and house made smoked ham and pickles. Share a salad, like an endive and pear with buttermilk dressing, frisée and lentil with a pheasant egg, or frilled spring greens with vinaigrette, and tear apart wood-fired bread with asparagus and goat’s curd.

On a cold winter night we’ve had a rabbit and tarragon pot pie topped with flaky pastry, but we’ve also seen a brothy fish pie. The flaky pastry gets a nice dusting of tiny pyramids of salt, and it’s super satisfying to take the first thwack with your spoon against it before you split it with your emergency contact, or even just the bestie who’s outlasted your decade-long situationship. This is tavern food at its absolute best, and we wouldn’t be surprised if the broth just happened to be the cure for, well, anything.

The two Andele restaurants have salsa bars where you fill a bucket with as many chips as you want and fill cups with as many of the salsa varieties as you wish. I got most of the varieties they had but passed on some of them. The chips were as good as anywhere around this area, so I ended up eating most of the bucket I had filled. On the salsa I thought their “regular” salsa was the best, while the others gave an interesting variety that you do not get at most restaurants.

If this were not enough, the bun was almost a meal in itself with its size being matched by its freshness and flavor. For the best meat taste in a hot dog I still like Caliche’s, but this one was very good also. The restaurant is aptly named because its patio is dog friendly. Of course the real reason for its name is that it serves several varieties of hot dogs (that is, that I believe the hot dog itself is the same in all of them but the toppings are different). People of the Mesilla Valley take their Mexican and Southwestern food seriously. It has to be tasty, it has to be spicy, and it has to be authentic.

Simply answered, it is improvised cooking in a folded tortilla. Our style is from the west central region of Mexico. White corn tortillas topped with flame-broiled beef, pork or chicken with grilled onion, wedges of lime, cilantro and a choice of salsas on the side. Try one with grilled onion and green salsa with a squeeze of lime, another with red salsa and cilantro.

On a previous visit to the regular Andele Restaurant I had what I believed to be its specialty–tacos al carbon. The other part of the menu, though, is New Mexican cuisine including local style enchiladas and chile rellenos. Tender slices of flame-broiled pork, beef or chicken on a sandwich roll baked especially for Andele. Piled high with lettuce, tomato, onion and cheese. 1 Rolled enchilada (green), 1 chile relleno, 1 beef flauta, green chile con carne with potatoes, beans and rice.

The big flaw in the red sauce, though, was that it tasted like it had cumin (and not just a small amount). I know this is a personal taste, but I prefer restaurants such as Nopalito who do not have a cumin taste. The Dog House has the same menu as Andele except that it has added several Mexican style hot dogs.
